BBQ Rub Recipes

 

A Carolina BBQ Rub    !! This one is GREAT !!

Chuck Ozburn sent me this great, classic Carolina barbecue rub. This is a great rub for Carolina Pulled Pork.

INGREDIENTS:

  • 2 tablespoons salt

  • 2 tablespoons sugar

  • 2 tablespoons brown sugar

  • 2 tablespoons ground cumin

  • 2 tablespoons chili powder

  • 2 tablespoons freshly ground black pepper

  • 1 tablespoon cayenne pepper

  • 1 tablespoon onion powder (we added this)

  • 1 tablespoon garlic powder (we added this)

  • 1/4 cup paprika (4 tablespoons)

 

Basic Pork Rub

This is a great classic pork rub that is perfect for smoked pork roasts. A particular favorite for pulled pork.

INGREDIENTS:

  • 1/4 cup black pepper

  • 1/4 cup paprika

  • 3 tablespoons sugar

  • 2 tablespoons salt

  • 2 teaspoons dry mustard

  • 2 teaspoons cayenne

 

Best Odds Brisket Rub

This is a very traditional style brisket rub, the kind used down in Texas for many years. This rub contains what you need to make a great smoked barbecue brisket.

INGREDIENTS:

  • 1/2 cup paprika

  • 1/3 cup brown sugar

  • 3 tablespoons garlic powder

  • 3 tablespoons onion powder

  • 2 tablespoons oregano

 

 

 

Porker's Rib Seasoning

This rub is perfect for all kinds of pork whether it's ribs of Carolina style pulled pork.

INGREDIENTS:

  • 2 cups paprika

  • 3/4 cup lemon pepper

  • 1/4 cup coarse ground black pepper

  • 1/4 cup white pepper

  • 1/4 cup onion salt

  • 1/4 cup granulated garlic

  • 1/4 cup chili powder

  • 3/4 cup brown sugar

 

Heavy on the Garlic Pork Rub

This rub is mostly garlic so if you like garlic this is a great rub. Work it well into the meat and try to mince the garlic as fine as possible. This is also a great base rub, add more ingredients to make it even more flavorful.

INGREDIENTS:

  • 8 cloves garlic, minced

  • 1 tablespoon black pepper

  • 1 tablespoon paprika

  • 1 tablespoon brown sugar

 

Aztec Rub

This wet rub is heavy on the cumin and contains liquid smoke to enhance the smoky flavor of your barbecue. The olive oil will form this into a thick paste and sticks well to any meat.

INGREDIENTS:

  • 1 cup cumin seeds crushed

  • 1 cup olive oil

  • 1/3 cup minced garlic

  • 1/4 cup liquid smoke

  • 3 tablespoon coarse salt

  • 1 tablespoon cayenne pepper

 

Hog Rub

A good general rub for any kind of pork, but specifically for smoked pork, like a whole hog or Carolina Style Pulled Pork.

INGREDIENTS:

  • 1/2 cup ground black pepper

  • 1/2 cup mild chili powder

  • 1/2 cup sugar

  • 1/4 cup coarse salt

  • 4 teaspoons dry mustard

  • 2 teaspoons cayenne

 

 

Brisket Brown Sugar Rub

This is a good, sweet brisket rub that you will need only one measuring cup for. Of course you can adjust the heat by adding more or less of the chili powder or by using hot or mild.

INGREDIENTS:

  • 1/3 cup brown sugar

  • 1/3 cup salt (coarse salt works best)

  • 1/3 cup paprika

  • 1/3 cup chili powder (choose a hot or mild powder depending on your tastes)

  • 1/3 cup ground black pepper

 

 

 

Best Odds Pulled Pork Rub

This traditional pulled pork rub will give you the best odds for making a great batch of Carolina Style Pulled Pork.

INGREDIENTS:

  • 1/4 cup brown sugar

  • 1/4 cup paprika

  • 2 tablespoons black pepper

  • 2 tablespoons salt

  • 1 tablespoon cayenne

  • 2 teaspoons dry mustard

 

Spicy Dry Rub

This is actually a great mustard rub that gives great flavor to almost anything but is particularly good on lamb and pork.

INGREDIENTS:

  • 6 tablespoons dry mustard

  • 3 tablespoons dried oregano leaves

  • 2 tablespoons chili powder

  • 1 tablespoon garlic powder

  • 1 tablespoon pepper

  • 1 tablespoon salt

 

Watch your eyes Rub

This rub has plenty of heat so watch out how much you use. You can adjust it by the heat of the chili powder you use: mild, medium, hot.

INGREDIENTS:

  • 1/2 cup paprika

  • 1/4 cup black pepper

  • 1/4 cup sugar

  • 3 tablespoons salt

  • 3 tablespoons chili powder

  • 2 tablespoons garlic powder

  • 2 tablespoons onion powder

  • 1 tablespoon cayenne

 

Scott's "Normal" Rub

Scott calls this his "normal" rub. It is a heaping amount of rub with a really good combination of flavors.

INGREDIENTS:

  • 2 Tablespoons Non-iodized salt - heaping

  • 1 Tablespoon Garlic Powder - heaping

  • 1 Tablespoon Onion Powder - heaping

  • 1 teaspoon Thyme - ground, heaping

  • 1 teaspoon Sage - rubbed, heaping

  • 1 teaspoon Paprika - powder, heaping

  • 1 teaspoon Black Pepper - ground, heaping

 

Chef Paul's Chikky Rub

This is a great all purpose rub with loads of flavor.

INGREDIENTS:

  • 1/4 cup sugar

  • 2 tablespoons paprika

  • 1 tablespoon onion powder

  • 2 tablespoons seasoned salt

  • 1/2 tablespoon garlic powder

  • 1/2 tablespoon chili powder

  • 1/2 tablespoon lemon pepper

  • 1 tablespoon sage, dried

  • 1/2 teaspoon basil, dried

  • 1/2 teaspoon rosemary, dried

  • 1/4 teaspoon cayenne pepper

 

 

Rustic Rub

This is a great general rub that works well with most everything. It also makes enough for you to keep it on hand.

INGREDIENTS:

  • 8 tablespoons paprika

  • 3 tablespoons cayenne

  • 5 tablespoons freshly ground black pepper

  • 6 tablespoons garlic powder

  • 3 tablespoons onion powder

  • 6 tablespoons salt

  • 2 1/2 tablespoons dried oregano

  • 2 1/2 tablespoons dried thyme

 

Spicy Rib Rub for Pork Roast

Claudia sent me this recipe for a rib rub for roasted pork.

INGREDIENTS:

  • 1/8 cup paprika

  • 2 teaspoons onion salt

  • 2 teaspoons dried whole oregano

  • 2 teaspoons garlic powder

  • 2 teaspoons dried whole thyme

  • 1/2 teaspoon ground red pepper

  • 1/4 teaspoon ground black pepper

 

Kevi's South-of-the-Butt Rub

The BBQ Guru posted this great rub recipe. You can adjust the heat in this dry rub by changing the amount of cayenne pepper.

INGREDIENTS:

  • 4 tablespoons paprika

  • 2 tablespoons salt

  • 2 tablespoons sugar

  • 2 tablespoons brown sugar

  • 2 tablespoons cumin

  • 2 tablespoons chili powder

  • 2 tablespoons black pepper

  • 1 tablespoon cayenne pepper

 

Moroccan Spice Rub

This wet rub is a great seasoning for anything you want to grill or smoke. The combination of flavors here is classic.

INGREDIENTS:

  • 1 small onion, finely chopped

  • 1/2 cup olive oil

  • 2 tablespoons lemon juice

  • 1/2 cup fresh cilantro, chopped

  • 1/2 cup fresh parsley, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon paprika

  • 2 teaspoons ginger

  • 2 teaspoons salt (kosher)

  • 1 teaspoon cumin

  • 1/2 teaspoon turmeric

 

 

 

Passover Barbecue Coat

This wet rub is loaded up with fresh horseradish to really put some flavor and heat into meat. This rub is great on everything, especially beef.

INGREDIENTS:

  • 1/2 cup honey

  • 1/4 cup fresh grated horseradish

  • 3 cloves minced garlic

  • 3 teaspoons finely ground black pepper

  • 3 teaspoons finely ground seeded red hot chili peppers

  • 1 teaspoon salt

PREPARATION:

Combine all ingredients and apply to most any grilled food right before you remove it from the fire.

 

 

 

Ciaotebaldi's Rub

This rub has a great combination of flavors that really adds great flavor to most anything. If you brush vegetables with olive oil and then sprinkle on this rub you'll get a great flavor off the grill.

INGREDIENTS:

  • 1 tablespoon kosher salt

  • 1 tablespoon ground bay leaf

  • 1/2 teaspoon cayenne, or to taste

  • 2 tablespoons black pepper

  • 1 teaspoon nutmeg

  • 1 teaspoon cinnamon

  • 1 tablespoon allspice

  • 1 tablespoon mace

  • 1 teaspoon celery seed

  • 1 tablespoon cloves

PREPARATION:

Mix thoroughly. Place in an airtight container and store in a cool, dark place up to 4 months. Use to season poultry, fish, beef, vegetables, and sauces

 

 

 Middle Eastern Lamb Rub

This rub is perfect for any kind of lamb.

INGREDIENTS:

  • 1 small onion, chopped

  • juice small lemon

  • 4 cloves garlic, minced

  • 1 tablespoon white vinegar

  • 1 tablespoon olive oil

  • 1 tablespoon salt

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspooon cayenne pepper

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon ground cloves

PREPARATION:

Combine all ingredients and mix together until it forms a paste. Rub this mixture over the surface of the meat making sure to get it evenly distributed. Plan on allowing mixture to sit on the meat for 1 hour before you cook

 

 

 

Tropical Poultry Rub

This poultry rub adds orange flavor with nutmeg and cloves to give you a great bird. If you are making a turkey you will want to double this recipe.

INGREDIENTS:

  • 2 tablespoons ground ginger

  • 2 tablespoons brown sugar

  • 2 tablespoons orange zest

  • 1 tablespoon finely ground black pepper

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

 

Jerk Turkey Rub

This mild jerk seasoning adds a great flavor to turkey whether you are going to grill, smoke of fry it. Remember when applying a rub to poultry you have to get it under the skin. The skin blocks flavor and won't let the rub penetrate.

INGREDIENTS:

  • 1 cup brown sugar

  • 1/3 cup white sugar

  • 1/4 cup salt

  • 2 teaspoons garlic powder

  • 2 teaspoons onion powder

  • 1 teaspoon white pepper

  • 1 teaspoon black pepper

  • 1 teaspoon powdered smoke flavoring

 

 

 

Chili Paste

This wet rub has a great citrus flavor from the juice and zest combined with a great selection of spices. Letting it sit helps the flavors blend and give the paste time to thicken.

INGREDIENTS:

  • 1 lemon (and zest)

  • 1 lime (and zest)

  • 1 orange (and zest)

  • 1/2 green chili, or more to taste (chopped with or without seeds)

  • 5 garlic cloves (finely crushed)

  • 3 tablespoons mild chili powder

  • 1 tablespoon olive oil

  • 1 tablespoon paprika

  • 1 teaspoon ground cumin

  • 1 teaspoon salt

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon ground cinnamon

PREPARATION:

Mix 1/2 teaspoon of each fruit zest and all the juices with other ingredients. Add more spices if desired. Let stand at least 30 minutes before using (should thicken)

 

Ethiopian Spice Rub

Okay, this isn't a simple rub. There are a lot of flavors in this mixture and you might not have everything on hand, but this is a great spice rub for anything. I really encourage you to try it, then you can go out and make it up in big batches since it will last for a year or more.

INGREDIENTS:

  • 10 small dried red chiles

  • 2 1/2 teaspoon Hungarian paprika

  • 2 teaspoons whole cumin seeds

  • 4 whole cloves

  • 1 teaspoon fenugreek seeds

  • 1 teaspoon salt

  • 3/4 teaspoon black cardamom seeds

  • 1/2 teaspoon black peppercorns

  • 1/2 teaspoon coriander seeds

  • 1/2 teaspoon ginger, grated

  • 1/4 teaspoon allspice

  • 1/4 teaspoon turmeric

  • 1/8 teaspoon cinnamon

  • 1/8 teaspoon ground cloves

PREPARATION:

In a small frying pan over a low heat, lightly toast whole cloves, cumin seeds, fenugreek, cardamom seeds, peppercorns, and coriander seeds for about 2 minutes. Allow to cool. Remove stems from chiles and grind with toasted spices. Add remaining ingredients. Store in an airtight jar.

 

 

 

Lotsa Spice Rub

This rub is loaded with flavor. The combination of hot chili flavors with rich flavors of the allspice and cinnamon make this very similar to a Jerk Rub.

INGREDIENTS:

  • 1/4 cup garlic powder

  • 1/4 cup onion powder

  • 2 tablespoons allspice

  • 2 tablespoons brown sugar

  • 1 tablespoon dried ground chipotle chile

  • 1 tablespoon dried thyme

  • 1 tablespoon cinnamon

  • 2 teaspoons dried lemon zest

  • 1 teaspoon cloves

  • 1 teaspoon nutmeg

  • 1/2 teaspoon hot chili powder

 

Jerk Rub

This is a great jerk, wet rub. The combination of the onion and scallions with the peppers and spices give this rub a lot of flavor. You can adjust the heat by increasing or reducing the amount of peppers.

INGREDIENTS:

  • 1 onion, chopped

  • 1/2 cup scallion, diced

  • 4 hot peppers, finely chopped

  • 2 teaspoons dried thyme

  • 2 teaspoons salt

  • 1 teaspoon allspice

  • 1 teaspoon black pepper

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

 

Tandoori Rub for Fish or Chicken

This rub will give you fish or poultry an authentic Indian flavor that is as colorful as it is tasty.

INGREDIENTS:

  • 1 tablespoon ginger

  • 1 tablespoon cumin

  • 1 tablespoon coriander

  • 1 tablespoon paprika

  • 1 tablespoon turmeric

  • 1 tablespoon salt

  • 1 tablespoon cayenne

 

Prime Rib Rub

This is a great spice rub for standing rib roast no matter how you prepare it. The combination of the pepper with the cinnamon give is an almost sweet, hot flavor. Really great flavors.

INGREDIENTS:

  • 1/4 cup fresh ground black pepper

  • 2 tablespoons cinnamon

  • 2 tablespoons salt

  • 2 tablespoons white pepper

  • 1 1/2 teaspoons ground thyme

  • 1 1/2 teaspoons garlic powder

  • 1 teaspoons onion powder

 

Cajun Blackening Spices

This is the traditional seasoning recipe for Cajun style blackened fish. Apply this rub and the throw the fish in an extremely hot cast iron skillet.

INGREDIENTS:

  • 5 teaspoons paprika

  • 1 teaspoon ground dried oregano

  • 1 teaspoon ground dried thyme

  • 1 teaspoon cayenne pepper

  • 1/2 teaspoon finely ground black pepper

  • 1/2 teaspoon finely ground white pepper

  • 1/2 teaspoon garlic powder

 

Chipotle Dry Rub

This rub has the great flavor of chipotle peppers. These smoked jalapenos really add a lot of flavor. Make sure you get this rub ground very fine.

INGREDIENTS:

  • 2 dried chipotle peppers (use 3 to heat it up a little)

  • 3 tablespoons black pepper

  • 2 tablespoons dried oregano

  • 1 tablespoon dried cilantro leaves

  • 1 bay leaf

  • 1 teaspoon cumin

  • 1 teaspoon onion powder

  • 1 teaspoon ground dry orange peel

PREPARATION:

Combine all ingredients in a spice mill or blender and grind until even. Store in an airtight jar. Will store for about 6 months in the freezer. Great for brisket, steak, and pork
