BBQ Sauce Recipes

Honey & Boubon Barbecue Sauce

The combination of good Kentucky Bourbon with honey makes a great barbecue sauce, the likes of which have been used in the South for longer than people can remember.

INGREDIENTS:

  • 2 cup honey

  • 1 6 ounce can tomato paste

  • 1/2 cup dark brown sugar

  • 1/3 cup jerk seasoning (optional)

  • 2 ounces bourbon

  • 1 tablespoon dijon mustard

  • 1 tablespoon garlic powder

  • 1 tablespoon cayenne pepper

  • 1/4 teaspoon Tobasco

 

Maple Syrup Barbecue Sauce

Mike Renchko sent me this great recipe for a thick, sweet barbecue sauce that has a great flavor. This barbecue sauce works best on pork or poultry.

INGREDIENTS:

  • 1 cup ketchup

  • 1 cup onion, finely chopped

  • 3/4 cup maple syrup

  • 1/4 cup lemon juice

  • 1/4 cup brown sugar, firmly packed

  • 1/4 cup water

  • 2 tablespoon garlic, finely chopped

  • 2 tablespoon Worcestershire sauce

  • 2 teaspoon grated lemon rind

  • 1/2 teaspoon salt

  • 1/2 teaspoon coriander, optional

PREPARATION:

Combine all ingredients in a saucepan. Bring to a boil and simmer for 15 - 20 minutes, uncovered. Cool. Store, covered in refrigerator for up to a month. Makes about 4 cups. Use on your favourite meat

 

 

Lee Custer's Barbecue Sauce

Lee Custer sent me this great barbecue sauce recipe. He gives you the option of using tomato paste or ketchup and while both are good they each give a unique take on the classic barbecue sauce recipe. If you haven't tried using tomato paste or tomato sauce for that matter, give it a try. You get a richer tomato flavor than with ketchup.

INGREDIENTS:

  • 1 1/4 cups tomato paste or catsup (good with either or mixture of both)

  • 1 cup water

  • 1/2 cup onion, chopped

  • juice of one lemon

  • 1/4 cup beer

  • 1 teaspoon salt

  • 1 teaspoon chili powder

  • 1/3 cup Worcestershire sauce

  • 2 big dashes of hot sauce such as Tabasco

  • 1/4 cup vinegar

  • 1/8 cup basil vinegar or balsamic vinegar (I prefer the basil)

  • 1 clove garlic

PREPARATION:

Place all ingredients in sauce pan except the onion and garlic. Put onion and garlic in a blender and liquefy. Mix with the other ingredients in the sauce pan. Heat until boiling over low heat, let simmer for 20 minutes

 

Barbecue Sauce Base

What to make your own perfect barbecue sauce? Try this base to get you started. This recipe will give you a good, thick tomato sauce that you can then add the flavor you want.

INGREDIENTS:

  • 16 ounces tomato sauce

  • 1 small onion

  • 1/4 cup olive oil

  • 1/4 cup cider vinegar

  • 2 cloves garlic, minced

  • 2 tablespoons lemon juice

  • 1 tablespoon black pepper

  • 1 teaspoon paprika

  • 1 teaspoon dry mustard

  • 1/2 teaspoon tobasco

  • 1/2 teaspoon salt

PREPARATION:

Sauté onion and garlic in olive oil in a saucepan. Cook until transparent. Add lemon juice, salt and pepper, paprika, mustard, and tobasco. Mix well. Simmer over medium heat for 5 minutes. Reduce heat to low and add tomato sauce and vinegar. Let simmer for an additional 15 minutes. From here you can add whatever flavor you want. Brown sugar, honey or molasses for a sweet sauce. Chilies and cayenne for a hot sauce. Really, whatever you like.

 

 

Cornell Barbecue Chicken Sauce

This is the famous sauce devised at Cornell University's Farm Home Extension sometime in the 1950's.

INGREDIENTS:

  • 2 cups vinegar

  • 1 cup oil

  • 1 egg

  • 3 tablespoons salt

  • 1 tablespoon poultry seasoning

  • pepper to taste

PREPARATION:

Put Ingredients into a blender and blend until smooth. Marinade chicken in sauce for at least 1-2 hours (overnight is good), baste while cooking

 

Robert Marshall's best ever BBQ Sauce

This is a good, thick and sweet barbecue sauce. By using tomato paste instead of ketchup, as most sauces do, you get a unique tomato flavor that really makes this sauce stand out.

INGREDIENTS:

  • 2 12 oz cans beer, opened and left to go stale

  • 1 cup dark brown sugar

  • 1 cup honey

  • 1 stick butter (1/4 pound)

  • 1 onion, chopped very fine

  • 3 teaspoons crushed garlic (more if you like it)

  • 1 good strong dash of Worcestershire

  • 1 good strong dash of soy sauce

  • 1 good dash of Tabasco sauce

  • cayenne pepper to taste

  • 2 small cans tomato paste

  • salt and pepper to taste

PREPARATION:

Mix all ingredients and simmer at a low temperature for about 1/2 hour or until honey and sugar and butter is all melted and mixed. I like to start brushing this on my chicken or ribs when they are about half done, then every time I turn them over, brush again.

 

Coca-Cola Barbecue Sauce

You might not think of a cola as the base for a barbecue sauce, but the sweetness of the soda makes this a good, sweet sauce.

INGREDIENTS:

  • 2 cups Coca-Cola

  • 2 cups catsup

  • 2 cups white vinegar

  • 1/2 onion large onion, finely chopped

  • 1 1/2 tablespoons black pepper

  • 3 tablespoons chili powder

  • 3 tablespoons salt

  • 3 tablespoons sugar

PREPARATION:

Mix all ingredients in a saucepan and bring to a boil. Reduce heat and cook slowly for 1-2 hours, stirring occasionally

 

Southern Barbecue Sauce

This is a classic tomato based barbecue sauce with loads of flavor.

INGREDIENTS:

  • 1 1/2 cups ketchup

  • 6 tablespoons cider vinegar

  • 1/2 cup water

  • 3 tablespoons vegetable oil

  • 2 tablespoons butter

  • 2 tablespoons Worcestershire Sauce

  • 2 tablespoon sugar

  • 1 teaspoon paprika

  • 1 teaspoon minced garlic

  • 1 bay leaf

  • 1/4 teaspoon tobasco sauce

  • 1/4 teaspoon cayenne pepper

  • the juice of one lemon

PREPARATION:

Combine all ingredients in a sauce pan. Mix and heat, without boiling for 5 to 10 minutes

 

 

Walter Jetton's Barbecue Sauce

This sauce is attributed to President Johnson's Pitmaster, Walter Jetton.

INGREDIENTS:

  • 3 cups ketchup

  • 1 cup honey

  • 1/2 cup brown sugar

  • 1/2 cup Worcestershire sauce

  • 1/2 cup water

  • 1 medium onion, diced

  • 1 green pepper, diced

  • 2 tablespoons tobasco

  • 2 tablespoons white vinegar

  • 2 teaspoons garlic powder

PREPARATION:

Mix all ingredients together. Place in saucepan and bring to a boil. Reduce heat and simmer until onion and pepper are tender

 

 

Classic BBQ Rib Sauce

If you like a rich, thick barbecue sauce on your ribs, then this is the perfect one for you. By using tomato sauce and tomato paste instead of ketchup you get a much better flavor.

INGREDIENTS:

  • 1 can tomato sauce

  • 1 can tomato paste

  • 2 tablespoons brown sugar

  • 2 tablespoons vinegar

  • 2 tablespoons olive oil

  • 3 cloves garlic crushed

  • 4 tablespoons minced onion

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dry mustard

  • 1 teaspoon cayenne

  • fresh ground pepper to taste

PREPARATION:

Cook minced onion and garlic in olive oil until onions turns opaque. Add remaining ingredients, mix thoroughly and allow to simmer 20 minutes. Makes about 1 1/2 cups

 

Alabama White Barbecue Sauce

This traditional Alabama Barbecue Sauce is based on Mayonnaise and not tomato sauce, vinegar or any of the other traditional barbecue sauce bases. Like many barbecue sauces you want to apply this only at the very end of your grilling or smoking. It will breakdown and seperate if it is heated too long. Use this barbecue sauce on chicken and turkey. It is also good on pork. Alabama White Barbecue Sauce has a tangy flavor that is a great addition to grilled foods.

INGREDIENTS:

  • 1 cup mayonaise

  • 1 cup cider vinegar

  • 1 tablespoon lemon juice

  • 1 1/2 tablespoons black pepper

  • 1/2 teaspoon salt

  • 1/4 teaspoon cayenne

PREPARATION:

Mix ingredients together and refrigerate for at least 8 hours before using. Brush lightly over chicken, turkey or pork during the last few minutes of grilling. This barbecue sauce is also great as a dipping sauce so set some aside before you start grilling to serve on the table

 

 

Basic Barbecue Sauce

This classic tomato style barbecue sauce relies on tomato sauce and paste, not ketchup. This gives it a more distinctive flavor while giving you an authentic barbecue sauce. If you want a smoky flavor try adding 2 teaspoons of liquid smoke to the sauce.

INGREDIENTS:

  • 1 can tomato sauce

  • 1 can tomato paste

  • 2 tablespoons brown sugar

  • 2 tablespoons vinegar

  • 2 tablespoons olive oil

  • 3 cloves garlic crushed

  • 4 tablespoons minced onion

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dry mustard

  • 1 teaspoon cayenne

  • fresh ground pepper to taste

PREPARATION:

Best Ever Barbecue Sauce

This is the classic barbecue sauce, heavy on the tomato with a wide range of flavors to make any barbecued foods taste even more authentic.

INGREDIENTS:

  • 1 cup ketchup

  • 1 cup water

  • 1 onion, coarsely chopped

  • 1/2 cup cider vinegar

  • 3 cloves garlic, minced

  • 1 tablespoon vegetable oil

  • juice and zest of 1/2 lemon

  • 4 teaspoons sugar

  • 2 teaspoons fresh ground ginger

  • 2 teaspoons salt

  • 1 teaspoon cayenne

PREPARATION:

In a saucepan heat oil over medium heat. Add onion, garlic, and ginger. Saute until the onion is translucent. Stir in ketchup, eater, vinegar, lemon juice and zest, sugar, salt and cayenne. Reduce heat to a low simmer and continue cooking for 25 minutes

 

 

Root Beer BBQ Sauce Recipe

Ingredients
1 cup Barq's Root Beer
1 cup ketchup
1/4 cup fresh lemon juice
1/4 cup orange juice
3 Tbsp Worcestershire sauce
1-1/2 Tbsp dark brown sugar, packed
2 Tbsp Steen's Cane Syrup
1 tsp liquid smoke
1/2 tsp lemon peel, grated
1/2 tsp ground ginger
1/2 tsp granulated garlic
1/2 tsp onion powder

Instructions
Combine all ingredients in a heavy medium-sized saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer until sauce is reduced to 1-1/2 cups volume, about 20 minutes. Season to taste with salt and pepper and cool slightly. Transfer to a ceramic bowl, cover and refrigerate.

This barbecue sauce can be made 2 weeks in advance. Keep refrigerated.

Yield: 1-1/2 cups

 

Root Beer Glaze

1 cup root beer (room temperature)
1/2 cup brown sugar
1/4 cup ketchup
1 tablespoon Dijon mustard


Cooking Directions
In medium saucepan, whisk together ingredients. Bring to boil; reduce heat to medium. Cook, uncovered until mixture reduces in half (about 15 to 20 minutes), stirring occasionally. Brush half of mixture on ham prior to baking. Brush remaining sauce over ham just as it comes out of the oven.
Makes about 1 1/3 cups glaze.

For a lighter flavor, offer glaze in a side dish at the dinner table for guests to flavor to their taste.

Serving Suggestions
This sweet glaze will please the kid in all of us. A bit different twist from a cola glaze. Use on the Basic Boneless Ham or the Spiral-Sliced Ham recipe.
